China is a country of variety and mixtures, particularly in its people, culture, climate, language and, of course, cuisine. Various marriages of herbs and spices, colours and smells, tastes and textures offer a plethora of experience for the senses. That is the reason why Chinese food makes such special demands on the wine.

The wine variety ranges from fruit-driven flavours of the lighter wines to crisp dry wines for the Burgundy region, which have the essential balance of fruit and acidity to partner the spicier, fuller flavoured dishes. The New World selection offers the ideal opportunity to partner a range of full flavoured grape varieties which will surprise you with their abundant fruit flavours and flair. For highly spiced Szechuan dishes try Gewürztraminer, or ‘spicy grape’ as it literally means. Other possibilities would be Chablis or Sauvignons. He’s honed his skills to play sensitively during wedding receptions to corporate functions as a solo saxophonist and on occasions - as part of a duo, trio or quartet.
